I'm on a low carb diet.
I don't usually go the diet route when things seem a little snug. I exercise more, cut out the junk and take the slow and easy approach.
But... well... my jeans are not fitting so well (read: threatening to cut off all blood flow to the lower extremities), and I have a trip coming up. I REALLY don't want to:
A) Spend my entire 13 hour flight unable to feel my toes.
B) Star in an episode of "The Fat American Goes to Japan."
Sigh.
Anyway, so by "Low Carb Diet" I mean that I eat cheese and bacon and pork rinds dipped in cheese and bacon all day, make everyone miserable with my miserable moaning and martyrdom, and then say, "Screw it!" at night and eat my way through the Halloween Candy. (Where ARE you candy fairy? Come get this stuff already!") Then, I spend the next day feeling like a failure, eating meat dipped in cheese, only to later hide in the closet with an entire loaf of French Bread.
You think I'm kidding, don't you?
So today, I decided to go ahead and start out the day with failure. It can only go up from there, right?
Easy Apple Pecan Sticky Buns.
Cut up one large Granny Smith (or other tart baking apple)
Toss it with 1/2 cup chopped pecans, 1/4 cup packed dark brown sugar and 2 Tbsp melted butter.
Put that mixture into 10 greased muffin tins, plop a refrigerated biscuit on top, and bake for10 minutes.
Flip it all upside down onto a platter, and eat as many as you can before the kids realize that breakfast is ready. If the little buggers don't eat them all, they're pretty good cold, while standing in the fridge, in the middle of the night, in a carb deprived "episode" as well... or so I'm told.
For dessert, (hey, if you're going to blow the diet might as well throw in a dessert after breakfast right?) I think one of these is in order.
I think I'm going to have to buy bigger jeans.
